Hill Street Char Kway Teow $3.00 (small) / $4.00 (large)
Today, I am back to share with you a famous roadside dish which stayed unchanged since a few decade of years back from this day. As you can see the picture above, the dish makes your mouth watery the moment you start to imagine it in front of you. The noodles are cooked to the right colour which attract people's attention, right colour also means that the noodles are able to absorb the black sweet sauce which gives the dish its flavour too. Char Kway Teow is a must try dish which is highly recommended by me as the dish is superb.
The dish is made from flat rice noodles which are stir-fried over very high heat with light and dark soy sauce (gives it a colour), chilli (gives it a kick), a small quantity of belachan (gives it a little spiciness), deshelled cockles ( gives it a chewy bite, bean sprouts (gives it a crunchy bite) and chopped Chinese chives (gives it a colour). The dish is then commonly stir-fried with egg, slices of Chinese sausages and slices of fish cakes so as to give the consumer more ingredients rather than giving just a few pieces of bean sprouts and that's it. The cooking time for this dish does not take more than 10 minutes, so it is definitely worth the wait to try this dish. I guarantee you that you will go back for more of it.

ReplyDeleteIt's hard to find char kway teow with authentic pork lard. Most of the hawkers uses massed produced pork lard that are dry and loses it's crunch pretty fast and has a strong stale pork taste.
ReplyDeleteI like the fact that this char kway teow owner takes the effort to prepare his own pork lard. The pork lard oil is also used to fry the char kway teow to produce one of the most heavenly taste that I would dwell for again and again. You can almost smell the distinct aroma almost 20 meters away.
My all time favourite and have to admit Hill Street Fried Kway Teow is definitely the BEST char kway teow in Singapore!
